When I try to connect to the local iTunes server all my iOS devices show ALL songs in the library for every playlist I select. So if I have an 80's Playlist on my iTunes server when I click on it my iPhone/iPad shows all 14K songs in the library. It does that for every playlist. I just swapped from a Mac mini to an iMac and completely rebuilt the iTunes library (freshly imported all media). My iPhones and iPads now do the same thing on the iMac.....so it doesn't look to be a corrupt library issue. My MacBook Air and Windows PC's running iTunes do not have this problem when connecting to the iTunes server.

The playlists themselves only have 100-500 songs in them. This has been going on for a while, and I thought that switching to a new computer would resolve it. But it does not look to a server issue.
