Your old hard drive is attached to an SATA connector, which is that external cable, correct? Yes
And that cable then plugs in to a USB port on your "new" iMac. (still correct?) Yes
What happens now when you plug in your OLD hard drive? How does THAT show up in your Disk Utility now, and how does it appear in the other System Information screens that you posted already with only the internal drive showing? See attached

Hmm... for some reason - a drive named OLD HARD DRIVE, and drive named macOS both appear as separate partitions on your internal SSD, which is a LITEON brand, 256GB SSD.
Which would lead me to believe that you have installed the LITEON SSD inside your iMac, and the original drive is no longer installed.
There's apparently no storage device attached to your USB bus (which would be an external connection, not internal SATA.)

You are doing a great job with the screenshots - unfortunately, one (the USB bus) does NOT show the USB storage device that you are using to connect to your old hard drive.
Can you do one more, from that System Information/USB tab?
Scroll down to show that part of the USB bus that shows the external drive that you have connected.

Right now - your screenshots do not show anything attached to the USB bus that would indicate any kind of external storage, like your old hard drive.

So - two more questions:
1. Do you have a LITEON brand 256GB SSD connected to your external SATA to USB connection cable?
2. What model iMac is your new iMac? You can find that detail, again in System Information, then Hardware Overview (the topmost item in the list) where you can see the Model Identifier. What is that? It will be something like iMac13,2

YOU KNOW WHAT I'M THINKING. Is that i mistook a second internal disc that was not titled and changed the name to old hard drive and that it's not the old hard drive that's connected that I'm looking at. When I go to trash the "old hard drive" that grey arrow comes up over the trash can and it doesn't ask for admin password. so is that even the dxrive i connected with the usb showing up? one pic is with it connected and mounted, the other is after i "trashed?" it

Nope. Two internal disks would STILL show both disks, even if you inadvertantly erased one, it would still appear as a device. For example, the second drive would still appear in your Disk Utility (so, that still results in my main question about where the EXTERNAL device is, and why that does not appear.
If you have an old drive attache to a USB connection on the back of your iMac, it would appear in Disk Utility, and it would appear in your System Information/USB tab. You have to scroll down in that window, so it shows other items below the USB bluetooth host controller, for example.
(Also, your post #22 shows your disk with only one partition "macOS", and not the other OLD HARD DRIVE. You said you attached the external hard drive, and now the one device shows TWO partitions, again the macOS and the OLD HARD DRIVE. And a second internal hard drive would STILL show in Disk Utility, even if it is erased. You don't have a second hard drive installed, but there is a DVD drive. There's no space for a second standard hard drive anyway)

I really do need to know - what is your new iMac Model Identifier? It shows on the first hardware screen in your System Information.
ANother (?) - - you have a hard drive attached to that external USB-SATA cable. There's a label on that drive. Can you tell me the brand and model number that is on that label?

Ok, that explains some of what you have....
That is a full-size hard drive, 3.5-inch. It won't have enough power on a USB bus, particularly on your "new" 2011 iMac, which doesn't even have USB 3.0 ports, only USB 2.0
So, you need a method to connect that drive, and also powers up the drive, like a full enclosure.
You won't get anything from that drive without a powered interface, usually an enclosure of some kind...

This is what I use for temporarily hooking up pretty much any drive combination for data retrieval.
This comes with a power supply to "spin" your drive up...

Yeah - I don't do that "live email" anymore. The last time I supplied my email on a public forum - found out that I "signed up" for a huge variety of junk mail.
But, glad to help, solutions are part of what this forum does (at least, it should be! :cool: )

(Would be nice to get travel money to NOLA, so I could see Tuba Skinny live, yeah, I'd go for that...)
