I'll be upgrading from my 2014 iMac to a new Mac Mini M2 Pro, and my question is about ports:

My iMac has 4 USB ports. The Mac Mini M2 Pro has 4 Thunderbolt ports and 1 USB.

Question: Are there high-quality USB -> Thunderbolt port adapters on the market?

I think you mean USB ports. No iMac ever manufactured has HDMI ports. Thunderbolt is backwards compatible w/ USB. Any device connected to your 2014 iMac can be used w/ the new Mac mini Pro's USB-A and/or USB-C ports (Thunderbolt/USB) given the appropriate adapter. Most likely you need USB-A > USB-C adapters.
