Couple weeks ago there was a lot of talk about a 500GB HD coming out that would fit into MB's, any updates or new news? Or any information at all? Thanks!

Samsung Spinpoint M6 500 gig SATA drive, now shipping. Has the 9.5mm height requirement for Macs.
This drive will fit in a MB? Where can you get it?
The MB (or the mini for that matter) is only limited by the technology advances in 2.5" HDDs. If it's 2.5" SATA1 (1.5 MBps), then it will work.
Samsung started shipping to OEMs last week, so keep an eye open for the usual places (e.g., NewEgg, etc.) in the next couple of weeks. Price will likely be around $300. FF is suitable for all Mac laptops.

I am not sure about others, but I have had terrible experience with Samsung drives failing on me to the point I won't purchase another for quite a while.
That's for sure.Hard drives can be a real crap-shoot, it seems.

Height is limited to 9.5mm without hacks (as described above). Hitachi's 500 gig 2.5" drive is 12mm high and won't fit in MB/MBP, and I suspect not in a Mini, either, but haven't looked that close at it.
Hitachi's drive has 3 platters, Samsung's has 2 (like all 9.5mm notebook drives).
