I've tried most of the standard network troubleshooting. (Reset network settings, Forget Device and reconnect, Reset modem/router) Consistently hitting my advertised speed on my Macbook and consistently hitting (roughly) 50 less on phone.... What is going on?!

Totally different devices interacting with the network. Maybe see what other phones are capable of to get a closer comparison.

There are lots of variables at play, but my guess would be your macbook has larger antennas and 4x4 mimo, while you iPhone has 2x2 mimo for wifi.
