No idea, but it sounds like some sort of specifically written background music that often accompanies ads.

Interesting - I know all the other music they have actually have artist names and the names of the songs.

Usually even these instrumental arrangements do come from commercial songs, so it's very possible it's from something rather than just being a background track made specifically for that video. Here's a list of music used by Apple, unfortunately this video is unknown as of now.

It sounds like it could be from Sigur Ros or Explosions in the Sky or some similar band.
