Apple Mail Clients

I have been looking but have not found an answer so thought I would ask here.

Is there a macOS mail client other than Outlook where e-mail responses have a header that appears as (rather the horrible Apple Mail one-loner and endless indenting)?

There are a handful of MacOS Mail Extensions on the App Store, and probably even more elsewhere online. You can also use the Mail -> Settings -> Viewing -> Headers to create your own custom message header list. Not sure this will do exactly what you want, but it's a start.
