That I can then manipulate, as in a word processor? I would prefer iPhone (as I don't have an iPad) but I guess iPad apps could be a last resort if I can't find any iPhone apps. It would be even better if the app could recognize cursive handwriting as well as print.

Basically, I want to be able to write on the go, but feel more comfortable doing it manually and tactilely using some sort of real-time handwriting recognition program rather than using my voice, Swiftkey, or any of the other common ways of typing.
