Would like my hue light in my mud room turn on when my hue sensor detects motion and turn off after 3 minutes. Also want to have to have my hue light red (and stay on until disarmed, only during night hours) when my alarm is armed. Any ideas how to accomplish?

Very simple. Have you tried creating in Automation tab, in the Home app?

Where is it exactly that you’re running into trouble?
