I am probably going to get Charter cable internet at my new apartment in Burbank, CA...

They offer a "free Motorola cable modem" with the service plan, however the website doesn't say what model number.

I checked out some of the cable modems on the Motorola website, all of them say they are compatable with PPC macs but no mention of Intel compatibility.

Anyone ever have problems with using a Motorola, or any other brand cable modem on a MBP or Mac Pro?

You should have no problem whatsoever. The internal CPU should have no effect whatsoever on compatibility with a cable modem. I've always had a router between the modem and my systems, and, for what it's worth, the router never mattered either for me in terms of compatibility.
