I've realized I barely use my phone for calls (I guess I'm part of the text generation). As a result, I barely scratch the surface with my AT&T minutes, and the rollover is useless to me. Is there any way to cancel the voice plan, and just pay for voice on a pay-as-you-go type deal (i.e. pay for the minutes you use).

Not a chance of that happening on a 2-year contract. That's AT&Ts moneymaker that they force upon you regardless if you need it or not (although most customers do).

If you want to not really pay for minutes then you could go prepaid. Of course then you would have to pay for the full retail price of your iPhone ($650 and up for current models) but T-mobile has a prepaid deal that is 5GB of data, unlimited texting, and only 100 minutes for $30/mo.
