Have just received it and hooked it up to my iMac G5 and VCR.... I'm using a s-video/audio to scart cable from the Canopus to VCR and have the dips in this position 1-off, 2-off, 3-off, 4-off, 5-off 6-on....

I get a good audio signal but the video is in Black and White!!!! can anyone help me out?

Are you going mac to vcr or vcr to mac? I havent used the Canopus, but here are some suggestions...

Check you don't have anything to NTSC on iMovie or the Canopus, ( or pal if you are not in the uk)

Does you VCR support svideo? svideo sends the signal as luminance & chroma down separate wires, if you video doesn't have svideo it might just be seeing the luminance part of the video.
