Does anyone know how to change the dafault app that opens certain file types in the Files App? For example I have an Excel file that opens with Google Drive instead of Excel.

Yes, I noticed this too since the GM. Practically every file opens in Google Drive, even zip files, while in the beta I was able to Preview them. There doesn’t seem to be a way to change that, at least I couldn’t find it. And the Google Drive app doesn’t do anything with those files, other than just trying to upload it.
