Hey, first post here.

I installed [sic] a copy of ultimate doom and it runs pretty slow. I am on an imac g5 w/ 256MB ram. Should be fine I assume, but there is obviously something I am missing.

What happens:
starts up fine, but the framerate is about 2fps or something. There is a little box in the top-left of the screen that is smooth as something that is really smooth. So a small part of the screen is fine for some reason.

Any ideas? I do so very much want to relive the old-school.

Is that the only Mac that you have?
Running games in classic mode isn't the best in the world (at least, in my experience) but still, it should run.

Running a game in Classic mode is going top be pretty RAM hungry. 256MB is the minimum required just to run OSX, then you are asking it to emulate OS9 then run a game. Put another 512MB stick of RAM in the imac. you will be amazed at the difference.
