I'm about to purchase some 1, 2, 3, and 4 button Homekit compatible light switches: myhomesense.com.au

My plan is to install, for example, a 2 button panel in a bedroom. One button would turn the lights on and off. The other button would operate the curtains.

Using one of the third party apps that allow complex Homekit automations, I'd program something like this...

Button press event >
If (curtainState = open | curtainState = openPartial)
Curtain.Close
Else If (curtainState= closed)
Curtain.Open
Else If (curtainState = opening | curtainState = closing)
Curtain.Stop

Can anyone tell me if they've had success setting up something like this using a single button to operate a curtain?

I just set this one up quickly using a motion detector and light. So if motion detected turn light on but if light is on and motion is detected turn it off. I think that should work for what you're looking for.
