Maybe the single most annoying thing about iOS11....

You can control the brightness, but there's no way to turn off the auto adjust.
So no matter where you set it, it will still automatically change.

Apple buried the setting due to potential damage to the OLED screen of the iPhone X if brightness is manually turned to the max for an extended period. It hasn't disappeared and therefore will never 'come back'.
