Does Apple News preselect some channels and topics to follow? Or maybe I've followed some channels and topics by mistake. Either way, I have a list of things that I'm following (which are, in fact, newspapers etc I have been reading and topics in which I am interested along with "News Editors' Picks".

I think initially it pre-selects some general topics for your news feed. Even if you don't select any topics it learns from what you read a view and will then start to tailor the feed towards what you've looked at in the past. Also if you subscribe to any newspapers it will give articles from those newspapers priority.
