Does iPod Shuffle support wireless in-ear headphones? Or iPod Shuffle has to be used with headphones that come with 3.5mm cable?

No version of the iPod shuffle supports Bluetooth. The only iPods to do so are the 7th generation Nano, and the iPod Touch line.

You can however find adapters that would plug into the 3.5 jack and transmit a bluetooth signal. You may run into compatibility issues though.

The Apple Watch does support Bluetooth, but I am not sure of the compatibility.

I would not recommend using an Apple watch for music, as storage is very limited, and the battery life will be poor.
