I have 4 adult "children" sharing my family Apple One account. My son wants to purchase an app using his credit card, not mine. He has no option to add a payment method, and it defaults to my credit card.

If I disable the family sharing payment option, does that mean that everyone will no longer be able to access any of the apps, movies, etc...that were previously purchased with my payment method? Going forward, if I purchase an app or movie with my cc, would they not be able to access?

Appreciate any insight, its a bit unclear and can't find much documentation from apple.

Yes, I think that is the case. I have a family account where I am the organizer and share with my siblings and parents. I've got purchase sharing turned off and their accounts do not see what I purchase and cannot access apps I've purchased but can set their own payment options.
