I keep backups for my iPhones and iPads on my iMac. I also use Time Machine to backup my iMac. Now I want to go back a get an iPad backup from Time Machine which had been previously deleted from the backups on my iMac.

On my backup drive I can get to the Mobilesync folder then the Backup folder under this. My question is how do I identify the name of the backups? Do I copy the whole folder structure back to the equivalent folder on the Mac and at this point the names will be revealed?

Pretty much, yeah. The folder names are a nonsense jumble. Bring ‘em all back, restore the one you need, then delete all of them again if necessary.
