If I install the iOS 8 beta on my 5s right now and decide in a few days I do not like it, is restoring back to 7.1.1 possible? Or is it just like with final software in that there is no going back?

I dunno, it says here that it can't be restored to older iOS versions

You should be able to go back. I installed 7.0b1 and reverted back. The SHSH keys will be available for 7.x until 8.0 is official.

iCloud Backups will be stuck with iOS 8, while you can always DFU restore back to iOS 7.
Thats pretty much all I need to hear. I plan on doing an itunes backup as well to be safe but I will probably turn off icloud backup after the phone is done restoring so I don't lose the backup completely assuming I decide to go back.
