I'm trying to deactivate / turn off sources in my Health App.

I can not turn off any source that is an iOS / Watch OS device - the checkmark stays on when I touch it.
I just want to 'turn off' some of the sources. I do not want to delete them - I know how to do that.
Has anyone found a solution to this?
