I’d like to customize my iPhone keyboard by adding options to the press-and-hold menus on letter keys. What file(s) do I need to edit for that?

I am running iOS 6.

Edit: I found it. The files are at /System/Library/TextInput and for English the bundle is called TextInput_en.bundle which has the relevant plists, notably Keyboard-en.plist and Keyboard-en_US.plist
