I have an automated shortcut that runs every night using the Shortcut Automations feature. The shortcut sends me a notification at the end of the shortcut. The issue I have is that an additional notification pops up which lets me know that the shortcut has started running. I don't want to see this secondary notification, all I want to see is the notification I programmed in the shortcut itself.

Is there any way to disable this "Shortcut is now running" notification?

There is sort of a hack by disabling these notifications through Screen Time. It's not permanent though, and I wouldn't count on this trick being there forever.

See this thread for more info. I realize it was posted in the iOS 15 forums, but it applies to iOS 14 too.

Same problem here. iOS 15.2 ( Beta channel ). Have 5+ automations set and no way of disabling notification
