I am hoping to find a way to record video of the portion of my iMac destop which is displaying a preview image generated in Pixelmator Pro while manipultating the image with the software sliders in Pixelmator. Quicktime freezes the screen during recording so that doesn't seem to be a solution. Any suggestions? thanks.

Which version of macOS? What are you trying to adjust/which “sliders” are you using? While at it: which version of Pixelmator Classic/Pro? What do you mean by »Quicktime freezes the screen…« - mouse control doesn’t work any longer, or…?

If you are regularly wanting to make screencast videos, I would recommend investing in a copy of Screenflow.

I have used it for many years, a fantastic screencast creation tool.
