Settings is not a "tab".
Settings is the same "Settings" app where all your system and app preferences are set. It's probably on your home screen.

Big difference between the two operating systems and the way apps work on them. And now you'll have to either repost in the right forum or hope someone comes to help since I don't have a Mac anywhere nearby.

Your iMac is running macOS, not iOS. Big difference with how the settings are presented.
Open your Mail.
Mail menu/Preferences
Choose Accounts.
Select your gmail account.
Click the (-) at the bottom of the account list, which will delete that account, if that is what you want.
