I installed iOS 10 and now can't pair my apple watch.
I tried to restore and went with delete this iphone - erase iphone and all content. Done.

Then went on to restore from a iTunes backup and now I am back on IOS 10 :(

How do I get my IOS 9 backup again?

Thanks - once I have done that, can I restore my backup from iTunes or will I end up with IOS10 again?
The backup was the latest iOS9 version.

Yes you can. As long as your "latest" is not iOS 9.3.3 beta.

Thanks - my last backup was the official 9.3.2 (I think) - 100% no BETA. iOS 10 was the first BETA I put on the phone.
Right before I put iOS10 on the phone I made a backup.
At the moment I am restoring it with the latest iOS9 version, once done it will ask me to restore from backup and I will select the last iTunes backup. Let's hope it works!
