iPhone 11 Pro I have question on Screen time's Content & Privacy Restriction

I have issue with :

• Photos permission restriction

If I enable the feature, Settings > Privacy > Photos is all greyed out but not in Settings > (Any third party application) > Photos
Apple support said I need to use App limit feature too to mitigate my concern.

• Siri & Search restriction

If I enable the feature, Settings > Siri & search is hidden but it is not greyed out in Settings > (Any third party application) > Siri & search

• Uninstall Application

If any application receive update or recently updated in App Store, I just simply swipe left (any application) available in App Store's Account page to uninstall from device but not in home screen (only hide from home screen), app library.

The issue persist on all iOS 14 stable releases (iOS 14 - 14.5.1), am I overly concerned with this question?
