Icons/File Changing on iTouch

I have successfully jailbroken my iTouch with iJailbreak, and installed a couple apps, but other than that have really no idea what I am doing.

1) How do I re-arrange the icons on the home screen

2) Can I also change the icons on the home screen

3) Can I access the files on the iPod in any way?
