Summerboard is sweet, but iFuntastic puts heinous black color-surrounds around all the main icons. Does anyone have a guide or automated way to restore the icons to having proper transparency around them, besides reformatting the iPhone?

Visit modmyiphone.com. I think they have all the original files there. They also have a bunch of themes you can install.
You can SFTP to your phone, browse to the /applications directory, open the various apps and replace the icon.png files there with whatever you want.
