On Apple’s website, it says that to get the keyboard in iPadOS, you need to pinch outwards with two fingers on the floating keyboard. But this doesn’t work for me in iPadOS 16. So how do you get to the big keyboard?

Are you using the Apple Pencil? If so, that keyboard can't be expanded.

So basically, as far as I can work it out, you put the pencil away and tap in a text box with your finger. This may bring up the big keyboard instantly, or you may need to tap something else first (such as the QR scanner button in chrome) to convince the app that you’ve really put the pencil away.
