Ipad Keyboard Questions/ writing software

My daughter wants to buy a portable, external keyboard for her Ipad. She has the basic Ipad with wifi service only. She will be using it on a trip where her internet/wifi access will be sporadic and she wants to be able to use it when she does not have wifi/internet access. Will the blue tooth keyboards work without wifi/internet access and no cell contract or access?

Also, does anyone have a good word processing/writing app to suggest other than what comes with the Ipad?

I use DocsToGo. I also have QuickOffice and OfficeHD. I prefer DocsToGo.

EDIT: I have a ZAGG/Mate with keyboard and a Clamcase on the way.

I use pages with the apple bluetooth keyboard. I'm so glad i spent the money on both as it makes my wrist thank me for sparing them from the atrocious typing angles.
