I noticed that every time I take a phone call, my iPhone 11 switches to 4G until the call is over then switches back to LTE. This happens in every call in multiple locations. Isn’t it supposed to stay in LTE? I don’t know if I never paid attention to this and it was always like that with my previous Max or if it’s an issue with T-Mobile.

This is an issue with the carrier - unable to host a VoLTE connection on your iPhone.
I have T-Mobile as well, but never experienced a drop to 4G. I don’t have a full strength signal either (hovers around 1 or 2 bars on my iPhone 7 and 11). I wish that they would add a 600 MHz tower in my area as I have experienced the speed difference while in other parts of CA. Faster than my cable modem!
As stated above this is your carriers fault, my XR dies the same when making a call it changes from 4G to 3G, I’m in the UK so don’t think we get LTE, it just shows 4G instead. Anyway it does this as my network doesn’t support voice over LTE, yet.
The network is the same (4G is called LTE in the US because in the iPhone 4S days AT&T decided that calling HSPA+ (i.e. 3.5G) was not deceiving, just like it's doing with "5G").
My phone does that too.
I would go to a T-Mobile store and have a new SIM punched and provisioned. Again, despite being in a area with poor signal, my phone has never dropped to 4G during a call and back.
Sure there is some drift on some days where I do see 4G or even Edge sometimes but it’s a very rare sight.
