Recently, my iPhone 8 touch screen sometimes randomly becomes unresponsive for no reason. The home button just keeps working as usual, the screen also doesn't freeze, it's just that touching it doesn't do anything whatsoever. I don't use a screen cover.

Waiting some time usually solves the issue, a force reboot always solves it.

Is there anything I can do about it, except buying a new phone?

It sounds like the digitizer cables might be loose. There’s ribbons that are attached from the display to the internal board of the iPhone. In your case, you’re looking at a repair at minimum if that’s what actually what it is.

Seeing that a reboot fixes the problem every time, that's pointing to maybe a corrupt software problem not hardware.
I'd reset the iPhone as new and try that before taking it to a repair shop.
