Carrier iPhone Notes Issue - Without iTunes

I have iPhone 7 and iOS11.

I am not an iCloud fan and don't use it. I cannot backup my Notes with any software. Even iTuned cannot see any of my notes. All my Notes are in "In My iPhone" section and I have fifty-seven notes to backup. No other sotfware I tried has been able to see the Notes. No doubt, the reason will be the settings on my phone. Please help.
