I think the answer to this is yes, but just to check: I plug both my Apple Watch USB-C charger and USB-C MagSafe charger for my iPhone into the same single wall plug. Is Apple's own 35W Dual USB-C port power adapter sufficient to power both these at 'fast charge' speeds?

My assumption was that (as I understand it) watch fast charge requires 5W and iPhone fast charger requires 15w = 20w total, therefore the 35w plug is plenty sufficient. Is that simple maths correct in this scenario?

Yes it is enough. Tested and listed as compatible on Apple website.
You can even charge an iPhone and a MBA M1 with it.
