Hi Everyone. The latest iphone I got came with 15.2.1. So unfortunately no jailbreak for me until someone figures this one out.

My main concern is making sure my phone doesn't update me to an even higher version without my realizing what is happening (this happened to me once before!).

I did turn off automatic updates. But if I understand correctly Apple downloads the update in the background anyway and waits for a chance to install it?

Is there anything I can do to prevent the update from downloading and the "software update available" button from displaying?

The update will only be downloaded if Automatic Updates is turned on. I don’t know where you read otherwise.
No worries, it won’t do anything. And if it should for whatever reason, you need to confirm the installation and can delete the update file in Settings > General > Storage
