Is the extra 500+GB worth it in your experience or should I just get an external drive?

Any insight is greatly appreciated.

More internal storage is always worth it if you can afford it in my opinion. Dealing with external storage is slower, you need to juggle where to put things, etc.

But I guess it depends entrirely on what you're using the machine for - what are you using it for?

Only you can make this decision. How much storage are you currently using? How will that change over time?

Depends on your usage. Beyond 512GB the Apple tax on storage is pretty high - for the cost of an extra 512 you can get a Thunderbolt enclosure and a NVMe SSD many times that size. Not quite as fast, for sure… but pretty fast nonetheless 😉

Going from 512gb to 1tb adds about $200 to the cost, I believe.

BUT... one other advantage...
The 1tb SSD is fully 2x as fast as the 512gb SSD (due to chip arrangements).

Granted, the 512gb isn't "slow" by any means, but again...
1tb is TWICE as speedy.

It's "up to you"...
