I have a MacPro6,1 that was running Catalina without any issues. I have successfully installed ESXi 6.7U3

Boot rom : 136.0.0.0.0
Thunderbolt Firmware Version: 19.2
DRAM : 64 GB
Graphics D300
ROM Revision: 113-C4012F-687
VBIOS Version: 113-C4012PA-012

Here is my problem :
Everything continues to work even after I disconnect my Thunderbolt display. However, as soon as I connect it back I lose all access to the host.
Ping fails and no ssh. I've tried 6.5U3 / 6.7U3 and 7.0, same behavior on all three.
I would greatly appreciate any pointers.

Did you tried an HDMI display emulators to fake the display presence? We need to use it with our racked minis even with macOS.

I tried a VGA dongle and that dint help. Should I try something like this? https://www.amazon.com/AmazonBasics...t-Adapter/dp/B00NH13K8S/ref=asc_df_B00NH13K8S

The VGA dongle I tried was similar, I thought something that is not passive would be sufficient. Is it possible that I have a different issue?
If I remember correctly, VGA dongles stopped working around Sierra time frame, we moved to HDMI since then. We use HDMI display emulators for macOS and ESXi minis, no problem. Btw, it’s not this one you linked, yours is a dongle to convert mDP to HDMI.

I can check the exact model we use Monday.

BTW, is this a good option? Looks inexpensive for the functionality it offers.
I personally only buy something on OWC if I really have to, too much problems. Anyway, display emulators are cheap. I’ll look the exact model we use on Monday.

I tried the HDMI dongle on the HDMI port and also on the thunderbolt port through a Thunderbolt to HDMI converter. In both cases the MacPro crashed when the Thunderbolt display was removed leaving just the dongle in place.

I'm desperate to try any other ideas.

Not the display makes the problem. The main problem is the Thunderbolt itself. Can you try it with a display only device? Something with only VGA or DVI? Maybe the HDMI also can create a problem because of the sound device.

Update: If I plugin the HDMI Dummy and reboot the Macpro6,1 the system comes us and is running. The Thunderbolt display is not usable and I dont have a DCUI. I've heard that their is some way to get the DCUI remotely. Does anyone have a pointer to a Howto ?

I don't have a 7,1 ? but this fixed all of my video problems.
