A client of mine had just upgraded to Ventura (on a new M2 Mac, actually) and Mail.app kept showing search results sorted by subject instead of by date..
You could switch it to search by date, but any new search wen back to sorting by subject..
i tried and old suggestion (here) but that was no longer relevant..
Eventually, i fixed it by doing the following:
Quit Mail
Go to ~/Library/Preferences/Containers/
and trash all the containers called Mail
When you re-open Mail, a few minor things like window position are reset, but the 'proper' default search was back..
