I did one backup of my iPhone on my Mac so far. I need this backup because there might be some information on it that I lost. The thing is, I also need to make a new backup. Can I make a second backup without overriding the first one?

And in case you run out of space etc. you can also copy/move/zip the corresponding backup (folder) and restore it later:
macOS: ~/Library/Application Support/MobileSync/Backup/<unique-identifier-string>
Windows: %USERPROFILE%\AppData\Roaming\Apple Computer\MobileSync\Backup\<unique-identifier-string>
