Migration Assistant step by step

I reinstalled Big Sur on my old mbp pro 15" retina 2013, I wish to recover data by Migration Assistant step by step.
On 1st step I selected only user profile and I recovered the whole it including Document and Download.
Can I run again M.A. to retrieve the rest data ?
E.g. other files and folders, Applications, System and Networks ?
If I deselect user profile in migration assistant and I select the other menu entries, the restored previous data are overwritten ? E.g. Document folder
