i just use itunes. highlight selection and go to the advance tab (or right click) and chose 'convert selection to...". To choose which go to prefrences, advance, importing and choose what kind of file type you want.

iTunes also support some QT plugin's such as Flip4Mac, FLAC, Vorbis
