I just got an iPhone 15 to replace my very old iPhone XS Max. However, I want to configure it as a new phone, but I beileve iCloud transfers Settings. Is that true?

Also, how does double eSIM work with the iPhone? Do messages, recent phone calls, etc get divided in two? Can I have both active? Like receive a phone call and can be from either phone, or does it have to be one at a time?

You can set up the phone as new by choosing not to transfer any settings or data.

iOS adds an indicator for each of your messages and phone calls. They'll be shown as "Primary" or "Travel" for instance, depending on what you name the lines. There is no separate sandbox for the two.
