what I am wondering is if this is installed won't it patch the tiff flaw and prevent the jailbreak?

Well, you would have already had to jailbreak'ed your Touch to run this patch. The patch won't undo what has already been done. It just patches up the TIFF exploit if you load a later image in your browser.

Plus, you can always restore everything to default if you needed to.

I'd put money of that TIFF exploit being plugged in 1.1.2
