I have a password protected Note that I store info in and after the “upgrade” to iPad OS 15, the contents vanished. Is there any way to recover this from a backup or something?

It depends on if it's an iCloud note or an on device note.

My understanding is that iCloud notes would sync any changes and may have erased the table completely.

On device notes would revert by restoring a backup.

Can you use the Undo button, or restore it from (iCloud) backup?

now I have a question, if we backup a Mac with time Machine can we restore Apple notes this way?
