Any recommendations?

I'd sign up for Apple News but I don't want to save every single story - I want to load the app and cache all of my favourite interests or 100mb of the latest articles to read on a plane with no wifi.

Unfortunately nowadays apps are not designed to be used "offline", because you cannot get tracked and hence not profitable.
I ended up setting a tiny rss server which I consume through the tiny reader app. Unfortunately less and less webs offers good rss sources, from the same reason as above, they want you to go through their cookie machinery.

So my recommendation for offline reading, probably not very useful, is to buy printed newspapers/magazines.

The tracking is true (sadly), but your workaround sounds interesting. Sadly I see RSS being phased out. Another idea is to use YouTube Premium and download videos for offline viewing for entertainment in non-connected scenarios.
