Good morning, it looks like everytime I do a backup of the iPhone on my macStudio (12.7), it overwrites previous ones.

I.e. I can only recuperate from the last backup, the list is empty.
Any idea how to keep older backups?

The only work around I can think of is to copy the old backup over to another folder before you make a new backup.

If you right-click/2 finger click on the existing backup in that window you can archive it, and then new backups will not overwrite it. This is a manual process each time.
