I may need to brush up on my Googling as I haven't been able to work out what I am doing wrong (12.0.1).

1. Currently, when I open a new window in Safari it always opens a gmail (and now youtube) tab - how can I stop this?

2. I have set Safari to a custom homepage but this doesn't seem to work (have restarted safari but no changes).

Any help would be greatly appreciated, thank you!

You have pinned those tabs. Unpin them and they will stop appearing. To unpin them, click and drag them out to the right. They should expand back to normal tabs and not appear in subsequent new windows.
