I found a really insightful portfolio for a design company which includes some concepts of different designs for the Apple Store from around 2000-2001. The company behind it is called Model Maker Studio, which is a firm based in the SF Bay Area. It's cool to see a glimpse of the design process for these original stores and what the stores potentially could have looked like had they integrated some of these concepts and design elements shown.

Forever nostalgic about the old store designs. I don't miss the kidney tables though.
